Trying to Stay Healthy on Te Araroa Trail
mmmm… veggies 🥦
I love my vegggies but it’s impossible to carry a cauli, broccoli, cabbage & a bag of carrots with me on the trail – so I’m blitzing & dehydrating 6 months worth🥕. Half a cup of dehydrated veggie goodness is enough for a serving with dinner (mostly instant noodles/ cup-a-soups/couscous etc..). I’ll be resupplying every couple of weeks – a friend is posting my pre-made packages to my accommodation for me.
